Corn Salad Grote Noord-Hollandse

A large-leaved corn salad variety producing very dark green leaves with a pleasantly distinctive flavour. Also known as lamb’s lettuce, it is a useful cool-season crop for fresh salads through late autumn and winter.

The leaves can be blanched a few days before cutting by placing a pot or box over the plant. Gather them before flowering for the best quality. The leaves are a good addition to salads, but are best used sparingly because of their fairly bitter taste.

How to grow

Sow thinly in a prepared seed bed, then gradually thin seedlings to 15cm (6in) apart. Keep plants moist to help prevent them running to seed in hot weather. Pick young leaves as baby salad leaves, or leave the plants to mature and cut the whole plant.

Corn salad is a valuable source of vitamins A, C and B6, plus iron, phosphorus and potassium.
