Corn Salad Verte de Cambrai

A traditional French corn salad variety with smaller leaves and an excellent flavour. The compact rosettes are very decorative and unusual, and can be harvested whole at six to eight leaves for a beautiful salad.

How to grow

Sow thinly in a prepared seed bed, 0.5cm (¼in) deep in rows 25–30cm (10–12in) apart. Gradually thin seedlings to 15cm (6in) apart. Pick young leaves as baby salad leaves, or leave plants to mature and harvest complete rosettes. Cloche protection helps prolong the winter harvest.

Keep plants moist to help prevent them running to seed during hot weather. Corn salad is a good source of vitamins A, C and B6, plus iron, phosphorus and potassium.
